It actually has a really deep and complete plot if you're willing to take the time to understand it. Occasionally inconsistencies like this pop up, though.
If by deep and complete you mean dumb and convoluted. Listen I enjoy the fuck out of KH (the only ones I haven't played are BBS and DDD), but the story is not it's strong suit.
Then you and I just have different tastes. By the way, though, it's pretty dumb to criticize a game series' plot when you haven't even played the most important and plot-heavy game.
Is that BBS or DDD? Cause I don't know anything about either. From everything I've played though the story isn't anything to write home about.
BBS. It explains and elaborates on so much, and changes more to the mythology than KH2 did. And hey, if you don't like the plot, that's your deal. I immensely enjoy it, though. The Roxas/Axel relationship is fantastic in particular.

And there's a huge plot hole that I don't know if it's been explained.
In BBS, the King takes a leading role in the fight against darkness. The main antagonist in that fight is Master Xehanort. But when MX fuses his body with Terra and becomes Ansem's apprentice, Mickey doesn't even recognize the name "Xehanort" when he meets Terra-MX a few years later (flashback in KH2). Why? Did he just forget the name of the Sauron-esque villain who's been the main catalyst for the whole conflict in the series?
Long story short, has this been explained, or is it just another lingering plot hole?

She is my favorite out of the main six. I prefer ponies outside of the show though, Fallout: Equestria is pretty gruesome and includes one of my favorite universes. I love that Velvet is a medic and is concerned about helping people, even in the world she lives in.

Who's your second favorite villainous female character from Avatar? Either Last Airbender or Korra.
There honestly aren't a lot to choose from. I'd probably go with Hama, though.
Yeah, the only other person really coming to mind is Kuvira. Why not her?
She was too stoic. Didn't have much of a personality other than being manipulative and sociopathically determined. She definitely had potential, but they didn't really do anything with her, IMO.
Yeah, Kuvira was sort of one dimensional in that respect. I think the show writers used that to their advantage as an extension of antagonistic ideologies within a short time frame (12 eps). The villains didn't have as much character because the ideas they represented correlated to emergent sentiments in a modernizing universe. I thought that aspect of the show was cool. Still, there's not a lot you can do with an antagonist in 12 eps. Azula was around for seasons. It's true, when you consider the time and characterization, Azula is actually objectively better.
Yeah, that's one reason why TLA is better than LoK. One big overarching antagonist is much better than four separate ones.

I've only seen like 3 animes, and only legitimately liked one. Baccano. It's an amazing series, and even though it's really short, it's endlessly entertaining and clever. I highly recommend you watch it.
