Along with the standard "em" dash, there's also an "en" dash, which is slightly shorter, and it's basically the same thing.
I'm sure if I used my phone more, it would let me type dashes of all sizes.

yeah, i'm sure you've noticed, but i use that double hyphen thing all the time The thing is that most keyboards don't come with a proper dash--they only let you use hyphens, which are a completely different thing. Hyphens have various applications, but they're normally used for separating compound terms, like "forum-going" or "abso-fucking-lutely." You asked if I should've used one hyphen there, though, and the answer is no. If I only used one hyphen, I would've made the compound word "back-but"--which sounds funny, but it's not what I'm trying to say. Double hyphens are meant to be treated as a dash, even though it's kind of informal. When you type a double hyphen in a modern word processor, it will combine them into a proper "em" dash, which looks like this: — But since my keyboard doesn't have a dash key, I have to settle for two hyphens instead.
