Nope, but I do have like 20 shinies. Just caught one today. Finishing up my living dex with the girlfriend and was getting eggs from the breeder. Accidentally went off the road and into the grass, and got into a horde encounter with a shiny roselia in it.

Pretty sure someone already mentioned this earlier. You can use boss souls either to get a large amount of souls instantly or to create a unique boss weapon. Souls are easily farmed (especially at later stages in the game) while you only get one such boss soul a playthrough. Obviously better to keep just them, unless you find yourself in a situation where you really need the souls. Just read the item description of the souls, it'll tell you what you need to know.

No way of really escaping the tree people's eating attack once they have a hold of you, but mashing the triggers and buttons helps you get out of their grip sooner.
Also, try lowering your shield more. Holding it up drastically slows your stamina recovery (try draining all your stamina and see how fast it refills by just standing still compared to when blocking), and there's several instances in the video where you're well out of range of any attack yet still hold your shield up, keeping your stamina at a minimum. And while attacking with your shield up might be good in some circumstances, it shouldn't be your default attack. I seem to remember it uses more stamina, deals less damage and has a shorter range. It can be good to get counter attacks off (you deal increased counter damage when attacking while your enemy is attacking himself) or to play it really safe (you used it well when fighting the 3 trees at the same time), but it really should not be your default way of using the spear due to the drawbacks.
Oh and if things seem a little too tough to be right (such as doing 10 damage a hit to a massive stone knight), it might be an indication you're not exactly going the right way. Dark Souls is tough, but it's not unreasonably difficult.

Literally the greatest calamity of our time. But on a serious note, dude was a great entertainer who started as a market vendor and became somewhat of an icon (even on the Internet thanks to top tier memes). His music was always pretty awful though, so not bothered by this at all.

He oversaw some of it, but he wasn't directly involved, no. It's called "B Team" for a reason, and while they did improve some mechanics a LOT (as a sequel should), the huge complaint is lack of intricate maps, bosses, and atmosphere.
I remember Yahtzee saying that his main thing was that where DS1 bosses look like something from the Lovecraft mythos, DS2 bosses were just "dudes in armour". Is this accurate?
Not reallyl. DS2 has more knight / "dudes in armor" type of enemies, but that's from everything there is to the game. It would be like saying that DS1 is just "rehashed demons" because you have Asylum, Firesage, Stray and such. DS2 has its Dragonriders, Mirror Knight and Pursuers but there's also the Chariot, Giants, Gargoyles, Rats, Manscorpions, mutated spiders, human-faced frogs, Medusa-like snake humans, Dragons and Sabertooths. I do think there's a slightly disproportionally large amount of knights in the game, but DS2 still has a very varied and wide array of bosses that goeswell beyond that. And either way, some of the "dude in armor" bosses are actually really well done.

You also have to keep in mind that Scholar of the First Sin has almost twice as many bosses as DS1 + DLC does, so just because it has more knights in armor than DS1 did does not mean that it's nothing but that.

A little bit of flush is pretty normal but if your face turns really red, it means your body isn't breaking down the alcohol in your liver properly. It's pretty harmless but has recently been linked to developing a higher blood pressure and being at an increased risk of related conditions. Better go easy on the alcohol.
