the reason we say it at all is because back when we were all stupid, we used to think demons would fly up our nose when we sneeze, because apparently that's when we're most vulnerable--so we said bless you to vanquish the demon--but clearly that's not the case anymore. it's just an artifact of our vernacular now

The whole situation is dumb, but it would be nice if there was a more neutral alternative to "bless you""excuse you" is kinda mean, but the closest we have.
