From what I know it was basically a parody that got so popular the creators realized they could make a good amount of money from canonizing it. So it's really America's fault for introducing capitalism.

It started off as a fun magical girl satire that later turned into Ulimited Hype Works in Drei.

Also Kiritsugu and Iri are still alive in that timeline. They destroyed the grail and the Einzberns to prevent the Holy Grail War from happening. Sella and Leysritt take care of Shirou and Illya in the Fuyuki residence while the two of them go off and do their thing around the world with Iri occasionally checking in on them.
