EVE's a great game, but from what I can tell, this list is about those games that significantly shaped an entire genre or laid the foundations for many games to come. As far as I know, EVE didn't really do that.
The only thing WoW did was casualize the genre. Ultima and Everquest would have been better to pick if you wanted to represent the MMO genre.
I'm not arguing that WoW is the best pick, though. I agree with you there. Just pointing out why I don't think EVE deserves a spot on the list (either). A great game? Yes. But one that defined and shaped a genre to the point that it became one of gaming's foremost landmarks? Not really.

Slightly off topic, but more games should copy some of EVEs mechanics. It would help the genre as a whole and remove some of the stale and monotonous aspects of the modern casual MMO are designed to try and cater to the lowest common denominator. Economies that are actually controlled by the players (for the most part) and losing assets upon death are things I'd like to see in particular.
