If I click it in the MCC it takes me to the Halo Channel, but there's no option to watch them.

Two makes there more than speakers.
At the moment you can find it in either 'Featured' or 'Originals.' Should be one of the first three tabs that you see. When or if you do find it, mark at as 'Queued' so you can watch it later if need be.

Go to Halo Channel.
Click on Halo Nightfall Episode 1.
Press Right Trigger multiple times.
Wait for a minute or two.
Done.
