I've read a number of books that don't just reach out and grab you, instead they demand investment, and pay handsomely

which is a form of reaching out and grabbing you

When I say 'demand investment' I don't mean in a literal sense; I mean you need to stick with it to get grabbed in the long run. Those more easily distracted can't make that investment.

sometimes a lack of a hook is a hook in and of itself

but not always

no sometimes it just turns out to be bland

I guess it's important to be able to sniff out the difference, not sure how to describe what tips you though

i feel like every book you've ever read and enjoyed has had a gripping opener, and you just didn't realize it

sometimes it's not the content of the prose that strikes you, but its structure, what kind of mood it sets, etc.

i hated the old man and the sea the first two times i read it back in middle school, because i didn't care for hemingway's dry style and (what i thought was) a hookless opening--it was only when i read it again in college that i realized the simplicity and bare-bones nature of his prose was exactly what made it so appealing

Not the actual "hook" lol. It's one thing to be invested enough to pick it up occasionally and read a few pages, it's another to find something you're invested in. I don't usually feel that until I'm invested in a character or two, and not many books manage to do that in a single page.

As long as you're aware of what interests you, and you aren't forcing yourself to read, it's okay to not be pulled in by the first sentence. Some things take time.
