Why don't cars have the driver's seat in the middle

I've never been as scared in my life as I was in a cherokee with a pilot attempting his first right seat landing from too high an altitude because the even more inexperienced left seat dun fucked up.

Well if you get hit and you're in the middle, you're fucked
If you're to one side and they hit the other side, it'd be less of an impact to you

Plus it's easier to get in the car

Significantly reduced visibility if you're in the middle and the position of the headlights in cars is why drivers seats aren't in the middle.
