I don't have a definitive favorite end all, be all.

For light snacking, gouda is the answer.
For cooking tomato sauces, Roquefort
For making the best grilled cheese I ever had, Havarti.
For something sweet and dessert like, some kind of fruited Wensleydale.

Spanish cheese is actually great to snack on, especially with Spanish chorizo or jamón serrano. Ricotta and feta blend perfectly when my mom makes baked ziti
