Should I even watch season 1? Like, it's really just a bunch of relatively self-contained episodes that don't add much to the overall plot. Plus, Azula isn't even in them. What do you think, should I just suck it up and drive through season 1, or skip to season 2, where it gets good?

I'd say it's ultimately up to you, but there were definitely some good episodes in Book 1 like 'The Storm' and 'The Blue Spirit' which were my favourites from Book 1.

You can watch season  3 but you won't understand some of the plot points or how/why some things are happening.

Well considering that the ending of Book 2 ties in directly to the beginning of Book 3, I would say that it's probably a better idea to finish Book 2 first. Admittedly I wasn't a big fan of Book 2's ending, but Book 3 won't make as much sense without it.

You can watch season  3 but you won't understand some of the plot points or how/why some things are happening.

I think I might just make the jump then and fill myself in on S2 through a Wiki or something while I'm watching S3.

Hmm, that is true. I wish Azula was in Book 1, I'd definitely watch it.
