One thing I do know is that pronouncing the 'u' at the end will make me sound like an idiot.


Yeah you still want to hint at it. Like in the phrase "I like you" is "dai suki" it's usually pronounced "dai-ski", but if someone is really trying to emphasis how much they like you they might say "daiiisuuuuuki!". Even then they kind of sound dumb, but Verb is right it's very faint usually. I think they do this in French too with certain words and phrases just to make the language sound smoother.
