If they were 100 billion years old they would have never been defeated by the Forerunners in the first place and would be all over the universe and still populating the Milky Way.

It is never stated anywhere that the Organon contains 100 billion years of information. Oh, they're transient? Stated where, exactly?

So they can travel across galaxies. K, that literally means nothing in the realm of deeper science fiction. If they're 100 billion years old (which they're not) they should already span the entire universe. Also letting yourself die is not a highly advanced feat.
