I actually do a piece at a time.

Process goes:
Left hand fork, right hand knife, cut a piece.
Switch hands and put piece of food into my mouth using the fork in my right hand.
Repeat.

God damn that sounds annoying.

That depends on what I'm eating. Usually if I'm using a knife I will hold my fork in my left hand. If I just have a fork in my hands I generally use my right.
