You know, I always wondered what the meaning behind lightsaber colors were.

How does a Jedi decide between blue, green, or purple? Or do they just take what's available?

I read that Samuel L. told George that he'd only play Mace if he was allowed to use a purple lightsaber, so there's that.

Quote
This functions as simple color coding to tell the good guys apart from the bad guys, much like the lasers from Imperial ships are green while the lasers from Rebellion ships are red.

In Episode VI: Return of the Jedi, Luke Skywalker constructs a new lightsaber. This was also meant to be blue, and appears as such in early trailers and posters for the film. However, it was changed to green to create a better color contrast during the scenes on Tatooine. This purely functional change both set Luke's lightsaber apart from the one he inherited from his father and opened the door for new lightsaber colors in the future.

makes sense

i wonder if there's a story justification for them, though
Jedi choose different focusing crystals depending on their attunement to the force.

The color is a by-product.

Apparently the crystals which are attuned to the dark side are characteristically different shades of red or orange, while most other colors form under light side attunement.

I've always preferred green, but recently yellow is a close second.

The colour is an option.
The colours were to distinguish their class. Blue for a Jedi Guardian, Green for a Jedi Consular, Yellow for a Jedi Sentinal.

This is a practice that they stopped using, and now the colour is purely based on preference.

Sith sabers are red - orange because of their dark affiliation, though.

This is true, but the reason those classes started using those crystals was because their attunement to the force fit their roles.

Silver, red, or maybe purple. Synthetic Crystals just sound more to my tastes than organic, but purple looks on point.

I'm glad in KOTOR despite what class you fit in you still got to pick what lightsaber color you wanted
