Monopolies. You have to eat there if you want food, so all the limited number of restaurants know that they can charge higher than normal prices.
The price of beer in most airports is atrocious because of this.

before leaving to povertyland i wanted a soda from mcdonalds before boarding, i didnt know a dollar drink would end up costing $2.50.

I recall getting cheap beer in Frankfurt's airport.

I've also been told you get free wine on Air France flights, including economy ones.
