You aim center mass in a combat/defense situation for one main reason, which is as follows: good luck hitting anything else. Statistically, if a policeman was to fire six rounds in quick succession at an assaulting target only two would strike. This is due to a combination of factors, ranging from your handgun itself, your shooting skills, the adrenaline in your body, and the rapid firing of your weapon until the threat is incapacitated. If lethal force is required, you need to be able to hit, not miss a bunch of headshot attempts and send stray bullets everywhere.
