Most side quests disappear after finishing the main quest. And yes, after finishing the main quest you're able to continue playing.

What do you mean you can't stand that boss?
The first phase is alright but basically Priscilla with a grab attack. The second phase is possibly the most boring boss phase in a souls game, Friede literally just spams the 1 magic ice spell over and over and over and over, Ariandel is alright but not many moves since he's only half the fight. And then the third phase is the annoying type of boss that seemed to get more popular after Bloodborne where every move is like 12 attacks long so you either stunlock the boss or you have to roll spam.
