His acting is so on point, he could go to hollywood. The script could use some work though. Also the opening up with him talking to his dog to generate emotional appeal was quite cheesy. If it wasn't obvious enough: fucking no. I don't forgive a person, who has been consciously commiting (((crimes))) with malicious intent. Maybe I would have a shred of sympathy for him if he admitted the things he's done. But he still clings to his old, worn out lies about how 'he has always made his affiliations to csgolotto clear'. Meanwhile, videos reporting on the fact already parody this shit by playing the skit where talks about how he 'found this cool new site called csgolotto' and how 'the owners of the site would be quite happy if he could promote them on his YouTube channel'. ( This is what I mean if anyone doesn't follow.) BUT WAIT THE OWNER OF THE SITE WAS HIM ALL ALONG. He's just an all around scumbag and this video is only further proof for me. If you want to know what every stat does, open the status window of your character and press back/select on your controller. Then you can choose the stat you want to have explained - from obvious stuff like hp to more convoluted concepts like the luck stat and weapon scaling. If the in-game descriptions are still too vague for you you always have a place to ask or a wiki you can consult. Also; if your inventory is open, take notice of the button prompts below.
Get used to reading item descriptions (by pressing X/square on your controller in the inventory). Many items have neat lore tied to them. Though the main reason to do that is to get to know the purpose of the item. Sometimes the hints are so explicitly stated, that there is no uncertainty as to what to do with them. 'Give to the Shrine Handmaid' or 'Key to the _____ in the _____' - things like that.
Anyway, since you mentioned (role)playing a knight, I assume you'll probably want to stick to the longsword weapon you've got during the game. It's a good weapon so don't worry that you'll have to replace it. But I think you'll also want to utilise miracles - a type of magic - as they're called, for two reasons, I think. There are quite a few offensive miracles but most focus on support. From various ways of healing, instantaneous and over time, to defense buffs, to curing ones, like getting rid of poisoning. Most of those effects can even be shared with allies. You'll have a lot more options on how to engage in your journey. Another reason; in DaS lore miracles are tales of the gods, which you are recounting to cast them. There are a few exceptions that tell tales of curses, but those are considered dark and heretical. I thought you'd be fond of that little tidbit.

It's funny how good some people are at this game. Just invaded a host with 2 phantoms clearly ganking at the Great Belfry. Killed them both. Darkmoon joins. Killed the Darkmoon. Host summons another phantom. And another. I kill one, another red invades as well. We kill the remaining phantom. A blue joins. We kill the blue. The host, who has been taunting the entire fight, books it the second he's no longer in a better situation and runs for the fog gate. Too bad the Xbox One can only record 5 minutes, because those 15 minutes would've made for a great video.
Update: invaded him again with the same red and we won against him, a white and a darkmoon. Good stuff.

I actually fight plenty of Darkmoons. For whatever reason though, I almost never get summoned myself. Played through NG+ with the sign equipped and got summoned only once (by the time I had actually spawned in, the host had already died).
I would love to actually get summoned as a Darkmoon would probably be my favorite covenant if I did
The last patch supposedly fixed that.
