Just lie and say you found out a friend of yours passed away or something and that's why you cried. Also try not to ever do that again.
Additionally remember how emotionally inexperienced she is and use it to your advantage -- at this stage of the game, small compliments like "your hair looks nice" will work wonders. Don't be too specific but don't be too vague either.
And I'd just be honest with her. And by honest I mean that you're really bummed she might be going away soon and that it sucks because you rarely enjoy spending time with people as much as you do with her. But not right away. Somewhere near the end of your time with her that allows you to finish on a romantic note but also have a lasting conversation about it.
Don't belittle yourself in any way. But, don't boast either. Let her make up her own mind about you based on what you allow her to perceive.

While I don't agree with all your statements about what shouldn't be taught to children, no where did I say you shouldn't teach them things against what their parents want. I simply said don't usurp the authority of a parent in front of their child... it demonstrates that rebellion is okay, when it isn't. At least until the child develops a higher level of agency.
