Once your rooms are "full" of resources when you aren't playing they shut down and stop using power or your food and water. So you can ignore it for days and go back to it and be fine

Don't bother building storage rooms for a very long time. It's a drain on power that you could do without. I had 200 dwellers and max vault size with only 1 single storage room. Just equip your dwellers with whatever you have and sell BB guns.
