I wouldn't necessarily say all meat-eaters are my "enemies". A lot of people concede that eating animals is wrong, but they just don't have the willpower to stop, which makes them weak. But not undeserving of my affection.

Adversary and/or opponent is better when it comes to opposing viewpoints and in debates.

Really, any insult without an argument is ad hominem, which simply shouldn't have a place in debates.
I think that adversary works well for the future, but not when talking about insulting people. Enemy doesn't cut it either, though.
