Everyone's mentioning a lot of them I think
Zero and SN: UBW are the only ones with anime adaptations at the moment. Everything else is either a visual novel, light novel, manga, or a game. The only thing that actually matters to the story that hasn't had some sort of adaptation announced yet is Hollow Ataraxia. So unless you want to know more lore don't bother with them, and even then there are more interesting parts of the Nasuverse than Fate. It's just they don't sell as well due to their severe lack of waifu bait so they don't get expanded on as much. Zero, SN, and HA are the only ones that really matter anyway.

Can someone explain why there's a billion Sabers? I've only seen the 2006 anime so I have no clue who Saber Nero or Red Saber or whatever are. Are they based on different mythological figures, or what?
I'm sorry you had to watch DEEN/Stay Night. Ufotable recently did an adaptation of the Unlimited Blade Works route and are doing a couple movies to cover the Heavens Feel route too. Back in like 2010 they also adapted the Fate/Zero light novel series so you've got that as well now. In regards to your question though the red and blue sabers people talk about are Arturia Pendragon and Nero Claudius Caesar Augustus Germanicus.

The only thing I can think when I watch people play this is "Why should I play this when Elite: Dangerous already exists?"
I got Elite a while ago, just started playing it a lot a couple weeks ago and I can safely say they're two totally different games. NMS is largely ground based while Elite is largely all ships. They're not really similar in any way really. Two totally different styles.
I say that while playing with two guys who have done a ton in Elite. One of them has been to Beagle Point and both have sunk hours and hours into that game. Both have loved NMS so far and agree there are more differences than similarities.
The out of cockpit stuff is just repetitive run of the mill survival gameplay though. Sure it's neat to see the creatures the first few times and naming stuff if you find it first is kind of cool, but the novelty wears off quickly once you start to realize that the creatures are essentially lego ones and the planets end up being little more than pallet swaps. Which leaves me with nothing other than the space stuff which all seems to be sub par when compared to Elite: Dangerous. The lack of engaging gameplay for ground stuff is why I never bought the Horizons expansion for Elite: Dangerous as well. If they ever end up adding more to it i'll bite, but at the moment I couldn't care less about it.
