Dark Souls 2 - Shitty button delay and unfair difficulty curve.
if you think the base game had an unfair difficulty curve you don't want to see the DLC
i'm at the end of the second dlc right now and so far most of the DLC bosses have just been a conglomeration of shitty design decisions that just make for an unfun experience while simultaneously boasting about how good it is because it's difficult
On the bright side, at least the PvP is worth the slog.

I remember trying to get into custom games groups early on in Reach, and all of them only wanted to play this really shit gametype called DayZ. Honestly the worst thing to happen since somebody decided plasma pistol starts was a good idea on maps with a Wraith.

i also don't know the lore mechanics behind the respawns. like if there isn't a bonfire will the chosen undead still come back?
That is a question we have no answer for. The fire always gets linked (possibly untill Dark Souls 3s ending) so the bonfires will continue to exist, and so we have no answer to what actually happens if it fades. People speculate that the age of dark would do many things such as mutate people into dark monsters like we see in Dark Souls 1s DLC when the original keeper of the Dark Soul is resurectes or even transform them into dragons like we see in Dark Souls 3 when the fire is the weakest it's ever been. Even in Dark Souls 3s end of fire ending it is suggested that another fire will eventually come into existence.

Like respawning at a bonfire? Yeah, that's explained by the darksign. Humans branded with it can respawn at bonfires but go insane after some time; in Demon's Souls the player's soul is captured by the nexus. But as far as Zelda canon goes, Link is never killed in the game except for when he's revived by fairies.

Couldn't link just collect him in a jar like the Poes?
that would assume the chosen undeads soul works like a poes does
well in dark souls you do collect souls within yourself, and in sould 2 there are other objects including the gaping ring capable of collecting them. That said, the absorption of souls does not seem to prevent rekindling.
