I am at new londo ruins after the depths. I dunno what to do there so I traveled up to the firelink shrine to see if I could save but the firekeeper is gone.
well like tru said you can kill him later but if you really want him to stop attacking you then go to bell tower where you fought those two gargoyles and speak to the npc inside the tower, you can buy this thing with souls to reset the dude at firelink

...Why would you kill him? Why would you kill ANY friendly NPC's unless you literally found out they were killers?
He's new to the game.
I was new to the game too. It takes someone really special to hit the few friendly people in a world so hostile to you.

I bet he never even exhausted the NPC dialogue too.

I have no idea what to do in the game right now. I got into new londo ruins and I can't kill any of the enemies and I can't find a bonfire.
Blighttown, go down from the hills.

Find the boss. New area.

i mean it's subjective, if your parents were shitty then it's understandable to not defend them but if they were good for you then i don't see why you wouldn't

Not quite. If you ask for a pardon from sir hugs a lot in the gaygoyle bell tower you can reset hostile NPCs.
