It's not even Bahamut though from what I heard. Just some avatar of him considering how small he is. A whole dungeon section takes place with you standing on his claw at one point.
Final Fantasy lore is convoluted anyways.
Nahh a lot of it usually is just re-occurring stuff like Bahamut is. Bahamut has always basically been the mightiest summon/aeon/god.

There's a quest given to you by an old woman; one of the Greymanes I think, that sends you on an errand to rescue one of her relatives from it.
