It's a cultural trend started by Mutant Civil Rights leaders. The idea that mutants should not be called by their human, or "slave", name is not one all mutants subscribe to, but most rename themselves when they first start to feel alienated from society.
Others are named by those around them for their actions or displays of power.
As for the X-Men themselves, I believe they are required to have codenames, like a callsign, though Jean Grey never really used one, until she is exposed to the Pheonix Force and becomes The Pheonix.
Ultimately, there is no protocol for naming.

I watched them all recently and yeah they're a tad cheesy but I love them.

Why though? I believe you, I just don't remember it being bad except for the all the characters killed off.
The plot was too convoluted for the ratio of exposition to action, the characters were thin and emotional precedent was greatly based on their assumption that you have intimate prior knowledge of the character's relationships with each other. Beyond that, the previous films did little to set up those relationships, though they didn't lean on them anywhere near as heavily. As for killing people off, it felt flimsy and they didn't do enough to emotionally endear you to those characters most of the time, and 9/10 times there was no real reason for that person to die at that point in the plot. It was incredibly unfulfilling.
