The whole "they do x so they might as well do y" is one of the most annoying non-arguments I keep seeing people use in regards fiction. A fictional story that intends to be taken seriously needs to maintain suspension of disbelief. The easiest way to do it is to have the setting be derived from something familiar to the intended audience. That's the route the Witcher takes, it balances the absurdness of its fantastical elements by grounding it in the idea that "hey, this is supposed to be like medieval Poland as the pagans imagined it" thus making it easier to accept the fictional world.

Of course the mere existence of nonwhite characters in the Witcher would not break suspension of disbelief, but given the setting they would be at high risk of coming off as shoehorned in or even worse being token characters. Then there's also the reason why you don't see Aztec gods in God of War or samurai in Wolfenstein: while the developers could add them in, they don't fit in with with the setting's theme and thus I find it hardly reasonable to expect such alterations.

It goes both ways too, in settings like science fiction or modern day having diverse characters is typically what would be expected and in that case not having multiple races represented would be questionable. Same deal if was set somewhere that you wouldn't expect many white people yet all the main characters were white, that could be reasonably considered whitewashing. However covering all genres under such blanket standards is, if I may say, a toxic form of idea policing that's generally uncalled for.
