Even when they do express emotions, they do so in such a shallow way that they just aren't beliveable. It's less noticable with second game, but it's still present in it, for example in a moment when Ezio receives hidden blade. I don't think that's even problem of Ezio himself, it just lack of moments in game where he can show that he is hotheaded or has any emotion besides smug shrug good guy type standart emotion pack.
