Goodness gracious, great balls of lightning!
I've always loved how every gun in Halo up to Halo Reach had its own unique ammo pickup sound whenever you would walk over it. In Halo 4 onwards, it was just the same sound.

I also like how in Command and Conquer 3, infantry units will yell at each other to take cover and stuff while under fire. When they destroy their targets, the infantry will do a little cheer animation which is something I find hilarious. And when they're idle, they will do random things like stretch or crouch. GDI Zone Troopers even do one-handed pushups sometimes when they're idle.

For the space maps in Battlefront 2 I like that you can hear chatter being done over the radio.

For Call of Duty 2 I love that each unit has a rank and their own name. For the Russian troops some of them are even women which adds to it as well. For the training part I like that we use potatoes instead of grenades. 

In Halo CE the marines with armor have higher hitpoints than the ones without it. For the grunts they have either a mask or a helmet and the elites have two different helmets as well.

In Republic Commando Scorch talks a lot which gets him scolded. When it's raining I love that the water collects on your visor and it gets wiped away.

For Knights of The Old Republic I like that the followers you have sometimes have conversations with each other. 

For San Andreas even though the tollbooths are pointless there are still vehicles stopping for them. For the stores even though you can't buy anything at them you are still able to go in them.

I noticed in Fallout NV for the first time last night, how there was one of those dinosaur figure toy things, with a cigarette in his mouth along with a smoke pack by it. They had something similar in Fallout 3 where in the back of a metro, there is a teddy bear strapped to the railroad track by a rope.

I never noticed that in all my years of playing, and it is EASILY avoidable. I think the tiny details like that are what show a devs passion. The tiny little things you don't need to do, add up to a more rich product.

Another example is in Total War Attila. You have this cast army v army game, and can zoom all the way out and see the carnage. But if you zoom in as they march/stand idle, you can hear them banter between each other, and sneeze and cough and stuff. I just find it great how a game that promotes itself as big scale battles, adds little things like that in it.

In Marathon, there was absolutely nothing in terms of ambient sounds, and it made getting ambushed, or getting rushed by a new enemy legitimately scary.

Also, in Advance Wars, the death Animation for infantry units makes them look like they're getting blown off the screen by a giant leaf blower or something.

Halo CE (on PC, at least) looks unusually crisp, and has extremely pleasing aesthetics for a game of its era. The particle effects were also sublime. The ambient sounds that played when you got near a radio or a covenant ammo crate were pretty cool, too. That and the Needler's sound effects were great.

Most versions of Road Rash and Unreal Tournament, seem to have a lot of extremely comical violence, which never fails to make me laugh.

in fallout 2, the predominately chinese inhabitants of san francisco will sometimes make remarks about your own character's whiteness (ha ha, look at the funny round eyes!)

Oh yeah, I remember seeing the Thugs 4 Less guys do that. The one that would win would always laugh.
