I regret not beating all the side quests before finishing the campaign

So in my latest playthrough I killed Ulrich and Runt and honestly it wasnt very enjoyable, the only way I managed it was by using cheap tactics like running away and spamming arrows as soon as I could turn around. I thought I was just shit at the game but most people online seem to be doing the same.It's like perfect parries and blocks mean nothing in this game because even if your defence is strong you can't ever throw your enemy off guard, Ive read somewhere that the "boss" like knights have unlimited stamina and other buffs. Whats the point of sword combos if you can't break your enemies guard, might as well fight a wall.

And yes, after finishing the main quest you're able to continue playing.
