Is it worth it to grind covenant items right now or will I come across many of them naturally over the course of my next 3 playthroughs? I need to get to rank 30 in some of them.

You should try going online now that you've beaten the game once. PVP and co-op with players is actually pretty fun.

That should be over double the damage. But the dancers swords not only have to check the same physical defenses as the other sword, but also the targets magic and fire resist. So they do pitiful damage. There's quite a few weapons in the game like this including a ton of the boss weapons.
