In a nutshell it's looking into how players interact with the game. It can be used to patch stuff if they see a specific thing being avoided or exploited when it wasn't the Dev's intention without the need for player feedback, but a more sinister suggestion is Devs datamine to find out what is stopping players from spending more money on their shit.
