I'm yet to go beyond 30 dwellersLike, I will be doing fine then within the space of ten minutes, all my food or water runs out and my dweller happiness begins to tank

The bar for each resource shouldn't be further than halfway.

It's just that whenever I can 'harvest' a new lot of food or whatever, it barely take sit out of the red, which in turn creates a self-sustaining thing where the happiness plunges and it takes longer to get resources.IT probably doesn;t help I rarely have more than about three people with any stats above, like ,1.

Happiness will drop, but it'll come back when you put them back in. I generally train at night and put them back in rooms during the day.

I'm usually scared to pull anyone out of resource management, lest the levels tank while I'm away.

It shuts down resource use after maybe 10 minutes away, but timed things like training and exploration keep going. So you'll stop using resources but train all night. It's pretty safe, and either way your dwellers aren't going to die from starvation or thirst.
I'm going to make Vault 101 - no one ever enters. And no one ever leaves.Well, I'll allow my lunchbox characters in. But otherwise, it's my new experiment.
