They feel fantasy, but I don't think they're perfect. I really want to see some of the other races in the games, like the Sloads and all of the Akaviri stuff.

It wouldn't be so bad if the majority of the races you play as weren't humans. Instead of having all these human races they should have done something like having the Redguards be some sand lizard kike race.
Yeah, of course. I have no idea how you could play a TES game without feeling like you're in a fantasy setting.

TES wrote the book on how a lot of pop fantasy is portrayed, particularly in video games. If it feels generic it's because it started the trends of mainstream fantasy.
