I found that fight to be a cakewalk. But to be fair ultra greatswords make PVE kinda easy.

It's bizarre to me that you're struggling with that boss. Sure, there's quite a few enemies in his fight but they're weak sauce. All that I can suggest is to find a large weapon or git gud.

Get rid of the two priests then kill the main mage dude. They go down pretty easily, not sure what your issue is...
