I can't fathom Luke Skywalker dying.

He's a character I've grown up with, he's still around as well. I remember reading through the old EU and some star wars wikis looking at some of the later events in the Old Canon. He never died in them. At one point he was an exiled Jedi Grandmaster but I recently read where he returned, though I already forgot all the details.

Why though? I thought those scenes were really well done and highlighted how big of a victory it was...

The problem is that you have people celebrating on Coruscant which is the Empire's home world. The reason why that is a problem is because that planet would be under imperial control so a celebration on that scale would be impossible to happen. The only way it would happen is if the whole Empire collapsed that day which it didn't happen. Even though the Emperor died that day there would still be high ranking officials that are able to still run the Empire which would still be a strong force. That scene is implying the only person left to run the Empire is Palpatine and the entire military for the Empire was at the Death Star 2 or in it. It's a really bad scene when you put simple thought into it.
