Bison is pretty good.

Duck is delicious, and rabbit is pretty good as well.

If fish counts as well, the I like swordfish and octopus. Prawn brains are extremely tasty when you suck them out.

Bison is really good. It's lean, but flavorful.

Best burger I ever had was a Bison Burger with Swiss Cheese, Lettuce, Tomato, Pickle, Mushrooms, and sauteed Onions on a Potato bread bun.
