This piece is a good analysation of it, and in terms of the actual canon the new design makes a lot of sense.

As the piece says the new ball design fixes the issue of manoeuvrability and speed for the R series. But it doesn't touch on the use of a football/beachball in the design, I very much doubt it was manufactured using a ball, it must be junk re-used for the droid. So this may suggest that it's the top part that is important, and the ball can be any ball, the ability to use refuse just enhances it's durability and practicality, the R droid's main selling point.
