Sometimes I wish Science would get more funds

Sports brings in more money than science, that's why. It doesn't matter if you deem science more valuable to humanity, it isn't as profitable in the short term.

And sports is also far more boring than science.. At least science has a variety.. You have the lame sciences.. such as Geology and then you have the epic ones like Biology, Chemistry, Astronomy, the beat goes on.

We honestly should be placing our bets on which Scientist will make the next big breakthrough

Science is full of shitheads, just like sports. It's just that sports are directly tied to entertrainement, and that's where the big bucks come in. From people going to a stadium and buying team swag, to people who pay subscriptions to watch matches or people who make bets.

If you could think properly then you'd realize that you could use the money from taxing sports into fueling science further.

You can't really compare them.
You can sit down and watch a game of football, for example. You can't sit down and watch fusion research.
And sports has a huge variety. Just look up a list of different sports, and you will see there is plenty of variety.

And betting on breakthroughs sounds boring as fuck, and wouldn't work.

I think those fun Science channels would like to prove you wrong : D. Sports get so repetitive, Science keeps changing and expanding. Entertainment should be dynamic, not static and repetitive.
