Because the two setups are being used for different purposes. The DS's touch screen wasn't implemented to give the user more workspace--it's there to create a field through which the player can interact with their game in a unique, tactile way which introduces a lot of new innovative mechanics and such. It's not really comparable.
Supreme Commander utilizes dual screen to create an interesting twist on a typical RTS title. Essentially letting you wage two battles in front of you at the same time. True, not many games use dual screen and some even lock you into one without a borderless windowed option, but the idea is still there. Although I'm not trying to argue with you. My second and third monitor I'm more than willing to admit was out of luxury. I didn't need them, I simply wanted them, and they did make my overall gaming and internet browsing experience more enjoyable. I just wanted to show you an interesting take on having a second screen with gaming.
