Yes, pretty much every Gundam title even within the UC (save for Char's Counterattack) can be watched standalone.

The UC titles are a lot like Star Wars where they give you the run down of what's going on as of now in their current year when the story starts and most main characters tend to stay within their respective shows unless they're really important (like Char, Amaro, and Bright). Furthermore, the most important event in the entirety of the UC is kept within only three shows (MSG, 08th MS, and 0080) with the rest just dealing with continual consequences of the aftermath. All you really need to know with any UC title is the Zeon is a bunch of Space Nazis and everyone is morally grey.

I haven't watched any new Gundam titles since Unicorn, unfortunately I couldn't tell you. All I know about post-Unicorn Gundam is that anything Tomino makes is garbage.
