I've only seen him in that animated clone wars thingy, he's neat but I don't really get what he is. He's like a big noodle monster in a suit of armour or something, with guns

Durge is a member of the Gen'Dai. They are essentially immortal, their bodies are bundles of nerve fibers making essentially everything they do with their bodies happen instantaneously. They can thus form these fibers anyway they want, whether that be just tentacley/noodley or turning their "fingers" into sharp razor blades. They have no heart or major organs, allowing them to take massive amounts of damage, and they can regenerate.

Many were killed during some Sith war, so they are rare in the galaxy combined with how they rarely reproduce. Most of his species are actually peaceful and philosophical, but once they become too old their minds start to deteriorate, and like Durge, they often end up becoming Bounty Hunters since they become psychopathic and crazy.
