Obi-Wan Kenobi for more recent characters. I mean, aside from his sarcastic, cock attitude they gave him sometimes in the prequel movies, he practically embodied what a true Jedi Knight should be.

For Old republic era, I want to say Revan...But he's not really a Jedi per say. He's more or less a Grey Jedi.
