Fungus would run rampant, and take over everything, including our food crops - becoming a huge problem for the survival of the human species. As dead matter (plants and animals) built up with nowhere to go, this would begin to make bodies of fresh water toxic and uninhabitable. The prices of water would skyrocket. Insane algae blooms would begin to take over vast stretches of the ocean, and not just by the shores where they typically form. This would kill off most marine life because of the toxins they produce. And, following the very basic concept of a food chain, the remnants that weren't killed by the algae would also soon meet their demise because of the complete fall of the marine ecosystem. In short, Earth would be turned into a filth-ridden wasteland with a small amount of humans living off genetically engineered food surviving in horrific conditions. Yeah, we are capable of surviving on our own, as you said. There is, however a kernel of truth to what you're saying. Maybe we are overestimating the importance of insects. We won't know unless all insects disappeared. Do you really want to find out?

To reference your original point about how insects wouldn't matter, read; Even though an insect-free world sounds great to most people, it world would be detrimental to our environment in many ways. First, there we would see the starvation of insect-eating animals such as frogs, moles, birds, lizards, and spiders who feed off insects to stay alive. Next there would be the inability to naturally recycle materials through composting which reintroduces nutrients into the soil. Our world would be buried in waste from all the trash we produce without insects such as beetles and their larvae, worm-like larvae, as well as true worms like night-crawlers.
Another disadvantage would be the plummeting of crop yields due to lack of pollination. The honey bee alone is responsible for pollinating almonds, apples, avocados, blueberries, cantaloupes, cherries, cranberries, cucumbers, sunflowers, watermelon and many other crops. Last and most importantly there would be a collapse in the food chain. It has been said, “many plants would disappear without insect pollinators, and entire ecosystems would collapse in the absence of insects in the food chain.”
A world without insects would be no world at all; we wouldn’t exist. However, even if our planet could exist, it would lack the wonder and beautiful that nature shows us everyday. People should think about the next they say, “I hate bugs,” for its because of bugs that we are alive.

You're wrong. Many plants solely rely on insects for pollination as other species do not pollinate nearly as much to sustain the species.
Believe me, no plant would die out if insects disappeared. Pollination would still continue in extremely limited forms, and the subspecies of the plant that adapted to non-insect pollination would eventually become the dominant form of the plant.
Extremely limited forms is the key word here, Class. Such a drastic change would not give Earths ecosystems time to adapt, which would result in a mass-extinction and very likely the eventual death of the human race. We'd be able to sustain ourselves for a while, but not forever.

Most plants would die, we would rely on genetically engineering to grow crops, CO2 levels would increase drastically, people in developing countries would be completely fucked over, and so forth.
Even the disappearance of honeybees that is happening right now has severe implications for life on this planet.
Like I said, plants don't rely solely on insects for pollination. Trees don't either. Animals, wind currents, etc do a lot of the work there. And once a tree is already planted and growing, it doesn't need insects in any way.
