It doesn't really matter since a horse wouldn't be able to stop you in the first place, even if you're unarmed. And a well trained guard dog only eats from his handler and nobody else, so you'd have a difficult time bribing a well trained guard dog in the first place. And if it's just one of those really vicious dogs that's been brought up badly and starved, you still don't have much of a window to infiltrate a house/compund because they eat FAST and then they'll be right on your ass. Unless you put tranquilizers in the meat.
I'm pretty sure a horse could lay someone low.

Sure, as long as its hungry.
But a herbivore might not have the same lust for food as a carnivore... you can't just keep them hungry to be vicious since they don't eat other creatures. They'd have to be well-fed to operate and if that's the case- if their guardianship is based on loyalty instead of viciousness- could they be bribed?
