The fans are what makes the franchise what it is, so I'd say their view holds significant sway. If someone wants to view only the movies as canon, they can. Or if they want to view everything as canon, they can. Corporate making decisions that are rash because it's too big of a task for people that know nothing about the EU to sift through it really shouldn't be considered as objective. I'm willing to bet that if they had gotten into it they would've found things they would like and that wouldn't conflict with canon. Really just a matter of laziness/not wanting to spend resources.

Even though your unwilling to watch them, shows like The Clone Wars and Rebels bring many things back into canon that were in the EU. In fact, every episode of Rebels so far as brought at least 1 thing from the EU back to being canon.
It is not "bringing it back to canon". The EU is already canon, Disney can suck a massive dick, Rebels and '08 TCW are not canon, the EU is canon.
The denial is strong in this one. All content aside from what Tackelberry mentioned isn't canon whether you like it or not. You have no say in what is and isn't canon. Cry all you want, but it's not going to make the EU canon.

Now I'm finishing a college course for a career path that I no longer want to pursue, so that'll be 3 years wasted come June when I finish my last year. And I currently have absolutely no idea what I'm doing with my life.

Years at College varies depending on the subject(s) and type of course within that subject. I'm doing 3 years because I did a Level 2 Diploma in Engineering, which was 1 year, and moved up to the Level 3 afterwards, which is 2 years. I'll likely be doing a few more years studying something else though once I've decided what the fuck I want to do.

Yes. If you've ever seen the technique required to use a Claymore, the fact that the hand guard could cut you or get cut off is very impractical.
