All of the core games are good with the exception of 6, code Veronica is pretty good as well.
The remake of re1 is arguably the best in the series and zero has the same style with a new mechanic thrown in. The tank controls are actually pretty lit once you get used to them in the first 3 games.
The first three games are classics and I highly recommend them. Zero was also very good.
Re4 was a huge departure for the series with an over the shoulder camera and more emphasis on combat, it's also my personal favorite. Re5 and re6 tried to change up this formula and it lead the series away from its survival horror roots.
Re5 is decent and worth a playthrough, especially with co op.
Re6 is the culmination of all the bad ideas they threw in over the years. It looks great, plays a bit smoother and does away with some of the irritating inventory management problems, but Christ is the story bad. It's honestly just a shout out to all the core characters from the previous games and does so many over the top, jump the shark moments that it's hard to take remotely seriously. It somehow manages to be pretty boring as well.
Re7 was fucking fantastic.
As for the spin offs, code Veronica was pretty solid, used the same tank controls of the first three games and gives a lot of background on the founding members of umbrella.
Outbreak 1 and 2 were shit, revelations 1 was shit, haven't played revelations 2.
