A Stormcloak victory would lead to both the Empire and Skyrim being weaker, which would only benefit the Thalmor. Plus, even if the Stormcloak fight for religious freedom is admirable, their blatant racism towards non-nords (even other humans) weighs that down.

I can admire them as freedom fighters, but they have a lot of questionable views.

If the Dominion was attacking ANY human nation, what makes you think independant Skyrim (and Hammerfell for that matter) wouldn't immediately attack on new fronts to join in the knife-ear removal?

Wouldn't matter. It weakens and divides the Empire, which is the primary goal of the Thalmor.

okay first the Argonians aren't even religious, 2nd there is no implication at all that Ulfric intends to stop the Dunmer from worshipping their gods.

Then why are Argonians pretty much not allowed into Windhelm? And the Dunmer pushed into the 'Grey Quarter' (previously the Snow Corner but changed because racism)?

Sure, they're not welcoming the entirety of Tamriel's inhabitants with open arms, but you can't really blame their distrust of Elves given what the Thalmor did to the Nords. Besides, they're actually pretty nondiscriminatory if a candidate is willing to prove themselves for their cause irregardless of race (which is also kind of a gameplay factor to be fair but eh), unlike The Thalmor where non-Elves are viewed as subhuman regardless of merit.
