So how come they only call the MC 'The Demon'

Is it because he was the one who specifically destroyed a Halo?

Because if I remember correctly  a few weeks earlier there was a whole planet filled with these guys, enough for not just one Spartan in particular to attain such a title.

Demon is actually a nickname for most Spartans.

I believe Thel coined the Spartan from Grey Team, Jai, as a "Demon."

Sorry to break your bubble, but Demon was a collective term for Spartans. They all looked basically the same from Covenant perspective, and were collectively given the same term.

Master Chief wasn't that special (fir a Spartan) before the battle of Alpha Halo. Not from the Covenant's perspective.

the one true God is Doctor Doom and we should all be worshiping him.
The Covenant refer to any particularly strong adversary as a demon. This includes all Spartans and some regular humans. In ODST you can sometimes hear them call you an 'imp' - a smaller but still deadly demon.

But wasn't he reffered to as the Demon after the event's of Halo:CE? As in, he's the worst of the worst to them.

That's because Bungie refused to acknowledge the existence of the books.

Or you could argue that pretty much all of them died on reach and John was mostly alone in his engagements henceforth. If there's one fighting you, you'd refer to it singularly.

Ah okay, haven't actually read the early books, I must do those someday, thanks for the enlightenment gents.

The Demon is throwing a grenade...that glows or emits light...which looks like a flare.

IIRC in Halos 2 & 3 the explanation was real-time translation provided by Chief's suit. In Halo 5 it's apparently to show that Jul M'dama is losing grip of his forces and they're protesting him by speaking the humans' language.

But I don't think that explains the aliens simply lacking the physiology to speak English. (Four mouth flaps with teeth doesn't seem practical in any universe, but it's better to not think about these things >.>)

They have translators built into their suits or something. I assume they aren't really speaking English when talking to each other in cutscenes, but it's translated for the player because then they'd have to focus on subtitles instead of the scene itself.

As previously stated, translation software. Since they took over 343 has developed a Sangheili language that they speak in cutscenes and gameplay. It's not just random gibberish unlike what is in Reach.

Like the other folks said, Chief's suit had translation software in it that translated known Covenant dialects. But your questions.

The Covenant can speak english because they studied human language when they had first contact. Most higher ranking members of the Covenant have a firm grasp of human language and tend to use it in insults or messages.

Grunts, in particular, use it commonly on their own because they tend to operate communications monitoring equipment, and have something in their biology about possesing higher learning synapses, allowing them to quickly and fluently learn multiple human languages which they've been known to use among each other when not in the sight of a superior or higher ranking species.

They also have a black market for human tech and entertainment, which is also why the language is known.

Some Sangheili can speak English, and do so by pressing their mandibles together to form "lips". The Arbiter is one example, I believe Jul M'dama is another.

Fun fact: The Prophet of Truth has been the only Covenant to have ever said "Master Chief" when referring to the MC. Everybody (Covenant and Separatists) else either calls him "Spartan", "Demon", or "117".

The "Great Journey" would be one as well. In reality if the Prophets got their wish they and everybody else would have died by doing it. That's no different than these religious cults committing suicide for theirs.
